Having been encouraged by Madame Sneha Jogi, when I did my twist on Madame Joelle Dubois’ recipe for Choux à la crème, I half expected the Afropean blogger to reject it outright. After all, I had dared to turn the dessert into a savory dish, giving it an Indian twist by substituting hot and sweet chicken for crème chantilly! To my surprise, being herself influenced by several cultures, Madame Dubois not only appreciated it but also encouraged us to make every dish our own integrating our cultural and familial traditions. It was heartening to see her curiosity for the Indian culinary traditions. The session was enriching even in terms of French language immersion, thanks to Alice’s open approach to moderation. Looking forward to many more of such sessions.
